Chowder is such a good winter dish, but what about during summer? I love this Nigella Lawson recipe, which freshens up the heavy chowder flavours with coconut milk, fresh lime and lots of coriander. Our local market was sold out of the latter this shopping day, but trust me, it really makes the dish if you can get your hands on it. You can even substitute out the corn kernels for baby spears, depending on your tastes.
Method
In a large saucepan, bring the chicken stock, nutmeg, bay leaves, mace, paprika and ground coriander to the boil. Add in the onion and potato, and cook for 8-10 minutes, until the potatoes have started to soften.
Stir through the coconut milk and reduce heat to a simmer. Stir in fish, prawns and corn and continue cooking for another 5 minutes, until sauce starts to thicken. Stir through fresh lime juice, then season with salt and pepper to taste.
Ladle into bowls, and top with chilli (if desired) and fresh coriander.
